Designed Sushi Fuku, a “fast casual” restaurant located in busy urban retail district that serves Carnegie Mellon University. The location features built-in seating, efficient food assembly spaces and custom displays. A major challenge of this project was including all of these amenities in the location’s 450 square feet, so that 6 to 7 employees could serve lunch and dinner to 300 to 400 customers each day during the peak months.
